Rack Ovens

Convection heat, a type of air circulation in which heat is transmitted to the baked goods by a fan, is used in rack ovens. A gas burner or heating components generate the heated air, which the fan then circulates throughout the baking chamber. To achieve an equal bake, the oven rack also rotates. Rack ovens are excellent all-purpose ovens and are used to bake everything from bread to pastries. These ovens support the baking pans with specialised carts or racks. These racks can be utilised throughout both the baking process and the dough preparation and proving phases.
